Your New Thanksgiving Special: Vibrant African Fried Rice

Let me introduce you to an African amazing way of preparing tasty, healthy and colourful rice, properly Fried rice, appealing to the eye and enticing to the mouth, not really one of those quick recipes I write about, but an hour is perfect to get it prepared.

Making healthy and beautiful rice for your Sunday thanksgiving You need: to grab the following ingredients from your grocery store or pantry;

  • ‎Rice
  • ‎Curry powder
  • ‎Fried rice spice ( for colour)
  • ‎Carrot
  • ‎Cabbage
  • ‎Green peas
  • ‎Scotch bonnet peppers
  • ‎Green beans
  • ‎Onion
  • ‎Bell peppers
  • ‎Garlic
  • ‎Ginger
  • ‎Seasoning cubes
  • Sweet corn
  • Eggs
  • ‎Salt (to taste)
  • ‎Meat ( beef, chicken, turkey)
  • ‎Liver (from any of your meat).
  • ‎Olive oil/ Vegetable oil

Oh!! You’ll also be needing an extra pot or pan.


‎Alright let me walk you through the process, but before that, huddle up your vegetables from the carrots to the ginger, wash thoroughly.


Dice your onions, bell-peppers and green beans each into separate bowls.

Grind your scotch bonnet peppers, ginger and garlic together.

Grate your carrots and cabbage too in a different bowl.

Lastly, boil eggs and green peas in pan, securing the peas in a plastic bag.


Also, you may decide to tend your meat too, in order to extract broth, which will be used for the rice.

Wash meat thoroughly with salt and warm water

Boil with moderate amount of water; do well to make your meat liver a part of this process.

Separate the boiled meat from the broth into a bowl

Dice your liver into beautiful chunks and set aside.


Okay, now that all the background work has been done, bringing your fried rice to reality shouldn’t be an issue.

‎Step 1: Start with washing out your rice into boiling water, and allow to par-boil for 10-15 minutes, depending on the texture of your rice, basmati rice shouldn’t exceed 10mins.

Drain rice into a sift and place the neatly rinsed pot onto the heat.


Step 2: Pour in a fair amount of soya or vegetable oil into the pot and allow to heat for 30seconds.


Note: If you’re no fan of fried meat, you could skip the next step.


Step 3: Place your already boiled meat and diced liver into the pot, sprinkle some chopped onion and allow frying, stirring them at interval.

Once fried to preferred color, place it on a paper towel to remove excess oils.


Everyone can join the moving train from here, even you with the cooked meat and liver.

Alright, shall we?

Step 4: Next up, add your diced onion, curry and fried rice coloring into already hot oil and stir.


Step 5: Gently add your earlier blended pepper mix into the pot, stir mildly and add little amount of water into the pot.

Add up the green peas, seasoning cubes and salt to taste,

Add 2 tea-cups of water and allow simmering.


Take the pot down, and place the new pot/pan, drizzle a fair amount of oil.

Allow to heat up for a few seconds, then put in your carrots, cabbage, green beans, sweet corn, diced-liver, more curry, and bell peppers and stir for 2-5mins.


Step 6: Place back the former pot, add up the extracted broth, allowing it to boil for at least 7mins.


Step 7: Gently add in your rice, while stirring, after which you will cover and allow everything to simmer for 5mins.

Lastly, add your previously stir-fried veggies and give a bold stir, allowing everything to mix into each other.


Place your boiled egg and meat to the side of your served dish, coz food is ready, delicious looking aesthetically pleasing fried rice is ready for your taste buds.
